Greenmama's Green Crackers

2 C. destemmed and chopped raw kale1 medium tomato, quartered1 medium carrot, grated1 1/2 C. buckwheat groats, sprouted1 1/4 C. sprouted wheat1/4 C. fresh-squeezed lemon juice, or more to taste1/2 tsp. salt1/4 tsp. onion powder1/2 C. ground flaxmeal1/2 C. raw unsalted sunflower seeds
Put vegetables, sprouted grains, lemon juice and seasonings into a blender. A high-tech blender will create a smoother cracker, but is not necessary. A chunky cracker is just as good. Puree until a paste is formed.
Remove puree from the blender into a medium bowl. Stir in flaxmeal and sunflower seeds.
If you have a dehydrator, spread the paste thinly but evenly onto teflex sheets and then score with a knife into rectangular crackers. Dehydrate at 100 degrees for 12 hours, flipping about 2 hours before they are done.
If you would like to use an oven, turn your oven to the lowest possible setting. Spray some parchment paper with nonstick spray and place on cookie sheets. Spread the paste as above and place in the oven with the door propped open. Bake for approximately 3-5 hours, flipping once an hour before taking them out. Watch them carefully so they don't get too crisp.
