Beautifully Baked Penne!

• 1 Lb. Smart Taste Penne Rigate• 1 Lb. Fat-Free Ricotta Cheese• 3 Egg Whites• 2 Cups Tomato Sauce• 10 Tsp. Reduced-Fat Parmesan• 1/3 Cup Parsley, Chopped• Freshly Ground Black Pepper• Salt
1. In a pot of boiling water, cook pasta until it reaches Al Dente. Drain, and set aside.
2. While pasta is cooking, mix together the cheeses, eggs, and 1 1/2 cups of the tomato sauce in a large bowl. Whip the mixture with a fork until it is fluffy.
3. Add pasta to bowl, and toss to cover with sauce.
4. In a baking dish, coat the bottom with remaining tomato sauce, and top with pasta and cheeses.
5. Bake in a preheated 375º oven for about 20 minutes or until fully heated.
6. Serve, and Enjoy!
