Lentil Dahl

Ingredients
Olive Oil, 1 tbsp Onions, raw, .5 medium (2-1/2" dia) Carrots, raw, .5 cup, chopped Celery, raw, .5 cup, diced Garlic, 2 cloves Ginger Root, 2 tsp Curry powder, 2 tbsp *Cumin seed, .5 tbsp Irresistibles Bio Vegetable Broth, 2.5 cup Cedar Phoenicia Green Lentils, 1 cup Pepper, black, .25 tbsp Salt to taste
Directions
- Saute onions, carrots, celery, garlic, and ginger in oil over medium heat for 3-5 minutes or until onions are soft.
- Add curry and cumin and saute for 2 minutes, stirring constantly to avoid scorching the spices.
- Stir in stock and lentils and bring to a boil. Reduce heat, cover and simmer for 45-50 minutes or until lentils are soft.
- Add salt to taste.
