Avocado & Lime Blackened Chicken Tacos

8oz skinless chicken breast1/2 t olive oil1T chili powder1/4 t ground cumin1/4 t salt1/4 t crushed red pepper (optional)1/4 t granulated garlic1/2 cup diced avocado1/2 cup diced tomato1 T diced onion2 T chopped cilantrojuice of 1/2 a lime4 corn tortillas1 cup shredded romaine
Makes 2 servings
1 serving = 334 calories
1) Combine cumin, crushed red peppers (if you like some heat), chili powder, garlic and salt. Slice chicken into 4 equal pieces and coat with spice rub created above.
2) Cook chicken in smoking hot oil until thickest section reads 165 degrees farenheit.
3) While chicken is cooking prepare a basic guacamole. To do this, cut avocado in half and score flesh from top to bottom and left to right then scoop out with a spoon. Finely dice tomato, onion and cilantro. Juice 1/2 of lime. Combine all ingredient in a bowl and mix until incorporated.
5) Heat up tortillas with grill, oven or microwave to soften. Place cooked blackened chicken in tortilla, top with shredded romaine and guacamole. Enjoy these healthy and flavorful chicken tacos!
