Monkey's Chicken Vegetable Soup

Ingredients
1/2c Broccoli, diced1/2c Cauliflower, diced1/2c Carrots, diced1/2c Baby Lima beans1/4c Peas1/2c Green Beans 1/4c Cabbage, shredded1/4c Poblano pepper, chopped1/4c White Onion, diced1/4c Celery, diced1TBSP Ginger root, grated1TBSP Garlic, minced3oz Grilled chicken breast, diced into small pieces1 Red Potato, diced1TBSP, and 1 Tsp Tomato paste3 cans FAT FREE, Lower Sodium Chicken Broth1Tsp Olive OilSeasoning to taste
Directions
Saute onions, garlic, celery, poblano pepper, carrots and ginger in olive oil for a few minutes, until onions are translucent. On the side, mix tomato paste with one can of broth and add to pot. Season to taste. I used red pepper flakes, black pepper, garlic powder, and sea salt. Add all other veggies,chicken other two cans of broth and simmer over medium heat for about 30 minutes.
