Rum chocolate Mousse

Ingredients
Granulated Sugar, .25 cup Rum, 2 fl oz Baker's semi-sweet chocolate (1 oz=1 square), 4 oz Heavy Whipping Cream, 3 tbsp egg white, fresh, 2 large Heavy Whipping Cream, 1 cup, fluid (yields 2 cups whipped)
Directions
Cook over low heat until dissolved but not brown:
1/4 cup sugar
4T rum

Set aside

Melt in a double boiler:
4 oz. semi-sweet chocolate

When melted, stir in:
3T whipping cream

Add rum syrup and stir till smooth

When cooled, but NOT chilled, add:
2 stiffly beaten egg whites

Gently fold this into:
2c whipped cream (*note..1 cup un-whipped should equal 2c whipped)

Will make 8 servings

Chill in sherbet glasses for 2 hours

May choose to garnish with whipping cream and chocolate shavings, or perhaps a bit of whipped cream and maraschino cherry or fresh raspberries. However, please note, garnishes vary with the preparer and were not included in the nutritional values.
