3 pounds chicken breast cubed, no skin2 Tbs. olive oil1 large yellow onion, chopped4 cloves garlic, minced2 tsp. salt1 tsp. ground pepper2 Tbs. ground cumin6 cups chicken broth, Swanson low sodium4 poblano chiles seeded & chopped2 jalapeno peppers, seeded & chopped1 large yellow bell pepper, seeded & chopped1.5 pounds tomatillos, husks removed1/2 bunch cilantro leaves chopped2 cans (15.5 oz) white kidney beans, drained1/2 cup ground flax seed
brown chicken cubes in oil and add onions, garlic. Cook until onions are translucent. add salt & pepper, cumin, chicken broth & ground flax seed. Simmer 1/2 hour.
Add all peppers & pureed tomatillos , cilantro & white kidney beans. Cook 30-45 minutes more.
