Cucumber & Tomato Salad with Mint

Ingredients
Red Ripe Tomatoes, 2 large wholeCucumber (peeled), 1.5 mediumRed onion 1/4 medium onion, chopped Parsley, 1 TbspMint, 1 Tbspred wine vinegar, 1 TbspOlive Oil, 2 tspMustard, 1 tspSalt, 1/4 tspPepper, black, 1/4 tsp
Directions
Chop Tomatoes, removing stem area. Chop cucumbers as desired (I sliced and then cut slices in half). Chop red onion. Add all three together.

Mix fresh minced parsley, fresh minced mint, vinegar, olive oil, mustard together. Add into tomatoes, cucumbers and onions and toss.

Chill/serve. Makes 6 cups
