Thai Pumpkin Soup

Ingredients
1 tbsp olive oil2 leeks, sliced thin2 cloves garlic, finely chopped3 cups pumpkin puree1 can coconut milk1 1/2 tbsp red curry paste2 tsp red pepper flakes6 cups 99% fat free chicken broth
Directions
In a large stock pot, heat oil on medium high heat. Add leeks, cook until tender. Add garlic

Add coconut milk, curry paste, and red pepper. Stir until well blended.

Add pumpkin and chicken broth. Bring to a boil. Let simmer for 30 minutes. Using a hand blender, blend until smooth.
