Baked brown rice with mushrooms

Ingredients
3 T butter1-1/2 cups coarsely chopped mushrooms1/2 cup chopped onions1 garlic clove, finely chopped1 cup long-grain brown rice2-1/4 cups chicken broth1/4 t salt1/8 t pepper
Directions
Preheat the oven to 350*F. Heat in a 2 quart flameproof casserole or saute pan over medium high heat:
3 T olive oil
Add and cook, stirring, until the mushrooms are lightly browned, about 8 minutes:
1-1/2 cups coarsely chopped mushrooms
1/2 cup chopped onions
1 garlic clove, finely chopped
Add and stir until coated with fat:
1 cup long-grained brown rice
Add:
2-1/4 cups chicken broth
1/4 t salt
1/8 t pepper
Bring to a boil. Cover, transfer to the oven, and bake until the liquid is absorbed and rice is tender, about 45 minutes. Let stand, covered, for 10 minutes before serving.
