Simple Orange-Ginger Beef Stir-fry

Ingredients
Marinade:2 oz Orange juice concentrate,separated into two equal portions;1 tbsp teriyaki sauce, separated into two equal portions;Ground Ginger to taste;Ground black pepper;A dash of salt;------3 oz lean steak;1/2 onion, sliced into large chunks;~1 tsp or 1 clove garlic, minced;Veggies (I usually use ~1/2 red or orange bell pepper and 1 stalk celery. Peas with edible pods, carrots, and broccoli can also be used)------1 serving brown rice, prepared according to package directions
Directions
Place steak in a small, flat-bottomed dish. Sprinkle with spices and add 1 oz orange juice and ~.5 tbsp teriyaki sauce. Marinate, refrigerated, for about 1 hour.

Preheat large skillet or frying pan. Add steak and cook until medium rare, turning once or twice.

Slice steak into 4-5 strips. Add onion and garlic, and cook for ~5 minutes. Add remaining vegetables, orange juice, and teriyaki sauce. If you want, add more ginger and pepper at this point. Cook for ~5 more minutes. Serve over brown rice.
