sweet and sour ham with brown rice

Prepared brown rice for 41 ham slice1 can pineapple chunks - in it's own juice2-3 bell peppers1 onion2 Tbls. corn starch2C liquid including:strained pineapple juice2 tsp. soy sauce1/3 C red wine vinegar
1. Chunk the ham, bell peppers, and onion into bite sized chuncks.
2. Drain the pineapple chunks and save the juice.
3. Combine these 4 ingredients in a medium sauce pan and simmer until the onions are clear.
4. Add the corn starch to the liquids and whisk to blend.
5. Add to the hot ingredients and cook at a low boil, uncovered, until thick.
6. Serve over brown rice.
