Egg Nog Light

* Vanilla Extract, 1/4 tsp * Cinnamon, ground, 1/4 tsp * Egg Yolk, 2 large * Granulated Sugar, 2 Tbsp * Fat free half and half, .66 cup * Milk, nonfat, 1 cup * Nutmeg, ground, 1/4 tsp
Combine milk, vanilla, nutmeg, and cinnamon in a saucepan, and heat over lowest setting for 5 minutes. Slowly bring milk mixture to a boil.
In a large bowl, combine egg yolk and sugar. Whisk together until fluffy. Whisk hot milk mixture slowly into the egg. Pour mixture into saucepan. Cook over medium heat, stirring constantly for 3 minutes, or until thick. Do not allow mixture to boil. Let cool, then add half & half and more vanilla if desired.
