Vegan Creamed Potatoes

Ingredients
8 medium potatoes1 medium onion1/2 cup soy milk2 tsp salt1 tsp garlic powder3 tbl olive oil
Directions
Peel and slice potatoes into thin slices, arrange in 9x13 pan. Chop onion and sprinkle over potatoes. Combine soy milk, seasoning and olive oil and pour over potatoes. Bake covered at 350 for 1 hour. Uncover and bake for another 1/2 hour.
