3 chicken breasts1 red bell pepper1 yellow bell pepper4 scallions or green onions1-2 cloves garlic1 tsp cumin1 tsp paprika1 tsp olive oil6 pita pocket halves
Begin by cooking the chicken breasts thoroughly, however you prefer. Once cooked, cool and cut into bite-sized pieces. Cut the bell peppers in half and remove stem and seeds. Place on a baking sheet and broil for 7-10 minutes or until skins of peppers are charred. While broiling, dice garlic cloves and green onions, keeping these ingredients separate. Remove peppers from broiler and cool. When cool enough to handle, remove skin and dice the peppers. Place cooked chicken breast, diced garlic clove(s) and diced peppers into a skillet with 1 tsp olive oil. Cook on medium heat and add cumin, paprika and scallions after 3 minutes. When warm, fill pita pocket and enjoy! Makes 6 servings.
