Carrot Ring

Ingredients
2 cups of cooked and mashed carrots4 eggs separatedThick White Sauce:2T. cornstarch2T butter1/2 cup milksalt
Directions
Add egg yolks, well beaten, to white sauce. Add salt to taste and mashed carrots. Beat egg whites until stiff and dry and fold into carrot mixture.

Place mixture in a well greased ring mold and set in a shallow pan of water. Bake in a 350 oven until firm (about 30 minutes)

Unmold carrot ring and fill the inside with creamed mushrooms or peas if desired.
