Sweet Potato and Black Bean Burrito

Ingredients
1 Tbsp. olive oil3 c. diced, skinned sweet potatoes2 c. black beans1/2 c. diced onions1 tsp. cumin1 tsp. cinnamon1/2 tsp. salttortillas
Directions
Dice sweet potatoes and onion. Saute in olive oil until tender. Add water if necessary to prevent sticking. Add black beans, spices, and salt. Cook until heated through. Serve on tortillas with cheddar cheese (optional). This dish is also great with a fruit salsa!

    Tried this lower calorie version and it's awesome! Burritos are a favorite in our house and we love having seconds, so this makes it possible. LOL Very good! Even our kids liked it! :-) - 3/10/12
