Saucy Chicken & Broccoli

Ingredients
1 boneless skinless chicken breast, cubed1 boneless skinless chicken thigh, cubed1 medium onion, diced1 bell pepper, diced1 inch ginger, gratedpoultry seasoning (or assorted spices)1 can chicken broth1/2c soy sauce3 TBS corn starch4c frozen broccoli
Directions
Season chicken with poultry seasoning or other spices. In a nonstick skillet, cook chicken, onion, pepper, and grated ginger until chicken is browned. Add soy sauce and cook 1 min more. Add broth and deglaze the pan. Bring to a simmer. Combine corn starch with 1 cup water and whisk into the simmering sauce. Thicken for 3-5 min. Add broccoli and cook until tender.
Serve over brown rice.
Makes 5 1-cup servings.
