Tofu & Mushroom Tacos

3 Hard Taco Shells2 TBSP Salsa1/4 package of Taco Seasoning1/2 cup Fresh Mushrooms1 cup Orange Bell Pepperr ( or any color you like )1/4 block of firm Tofu Handful of Baby Spinach and Greens Mix1/4 cup Soy Cheese1/2 TBSP Extra Virgin Olive Oil1/4 cup Red Onion1/4 cup Water
Heat olive oil in a pan on medium heat.
Chop and slice up the mushrooms, peppers, red onion, and tofu. Throw into pan and cook until tender. Add in the taco seasoning and water and let simmer for 7-8 minutes.
Shred the soy cheese while waiting for sauce to thicken.
Fill taco shells with the mixture adding the salsa, soy cheese, spinach and greens on top.
Serve with vegan sour cream if desired. **this is not included in recipe**
