Creole-Style Shrimp

2 strips Morningstar Farms veggie bacon1 onion, chopped1/2 green pepper, chopped1 stalk celery, chopped1 clove garlic1 (16 oz) can diced tomatoes1 bay leaf1/2 tsp ground black pepper1 tsp Annies vegetarian worcestershire sauce2 drops liquid smoke1 tsp hot pepper sauce1 lb frozen cooked shrimp, thawed1 tbsp canola oil
Cook bacon in 1 tablespoon canola oil in a large skillet over medium heat until crisp. Drain on paper towels and crumble when cool.
Heat the remaining 1 tablespoon oil in the skillet, and cook the onion, bell pepper and celery for 5 minutes, or until tender. Stir in garlic and cook for 1 minute. Add tomatoes (and their juice), bay leaf, black pepper, Worcestershire sauce, liquid smoke, and hot pepper sauce and heat to boiling. Reduce heat to low and simmer for 20 minutes. Add shrimp and bacon and cook for 10 minutes, or until heated through. Remove and discard bay leaf before serving.
