Robin's Spinach, Feta & Cheese Omelet

1 SMALL WHOLE Egg1 SMALL egg white4 large Spinach leaves1 1/2 TBS sliced Black Olives1 medium Scallions chopped4 cherry tomatoes, quartered1 1/2 TBS shredded Cheddar Cheese2 TBS Feta Cheese cubed1 TBS shredded Mozzarella Cheesespray for cooking
Chop vegetables and shred cheese, set aside
Spray small skillet with Pam or other cooking spray, add spinach leaves and 1 tomato. Cook gently until spinach is partially wilted then remove from pan.
Beat eggs and place in skillet and let cook until almost done, add vegetables and fold egg over. Cook until combined, flip over, top with feta and heat.
Serve hot. Top with pepper if desired.
