Fall Holiday Rice Kugel

Ingredients
1 c.rice 1 tsp. salt 4 c. boiling water 1/4 c. butter1/2 c. confectioners' sugar 4 eggs 1 tsp cinnamon 1 tsp finely grated lemon peel 1/3 c raisins 2/3 c dried cranberries1-2 c shredded apples• 1/4 c. chopped nuts
Directions
Cook rice with the salt and 4 cups of boiling water for about 20 minutes, until tender, drain. Cream butter and sugar. Beat in eggs, one at a time. Add cinnamon, lemon peel, raisins, dried cranberries, apples, and chopped nuts. Mix well. Add cooked rice. Bake in a greased casserole at 350° until browned, about 1 hour. Serve hot or cold.
