Dear Dear Sweet Potato Pie

Ingredients
Sweet potato, cooked, baked in skin, without salt, 2.25 pounds Butter, salted, 0.5 cup Granulated Sugar, 2 cup Egg, fresh, 4 large Cinnamon, ground, 1 tsp Salt, 0.5 tspNutmeg, ground, 0.5 tsp PET Evaporated Milk 12 oz canPie crusts, 4
Directions
Preheat oven and cookie sheet to 375F. Boil or bake sweet potatoes until easily pierced by fork. Cool slightly. Place cooked and peeled potatoes in large mixing bowl. Beat with electric mixer until smooth. Stir in butter and sugar. Beat in eggs, one at a time. Mix in spices, salt, and PET. Pour into unbaked pie crusts. Bake on preheated cookie sheet near center of oven for 60-70 minutes or until knife inserted in center comes out clean. Makes 4 9-inch pies. (I don't use deep dish crusts.) Cut each pie into 8 slices.
