Ingredients
4 servings Roasted Salmon with Apple-Almond Pesto1/2 cup panko breadcrumbs (Japanese-style breadcrumbs)1 tsp Dijon mustard4 ounces Greek Style yogurt, plus 4 tsp for garnishpinch black pepper4 leaves green leaf lettuce
Directions
Flake the roasted salmon and mix with the apple-pesto mix. Combine the salmon and apples, bread crumbs, mustard, and yogurt in a large mixing bowl. Season with black pepper. Form into four cakes. Preheat a nonstick pan. Coat with cooking spray. Cook patties just until warmed, about 2-3 minutes per side. Top each salmon patty with one teaspoon of Greek yogurt for garnish, and a lettuce leaf. Serve on your choice of buns/bread.
Makes 4 burgers.
