1 head romaine lettuce1 cucumber1 bunch parsley1 bunch radishes1 green pepper1 red pepper1 bunch scallions1 white onion (optional)several firm roma tomatoes (about 8)Dressing:olive oillemon juicesaltpepper (optional)mint (optional)sumac (optional, can be replaced with cumin)
Chop all vegetables (including lettuce and parsley) into relatively uniform, small pieces. Toss and add the dressing ingredients to taste (recipe calculated for 1/2 cup olive oil). Can be served as a side salad, or tastes great with M'jadarah (lentils and rice)
