Vanilla Cinnamon Pancake

Ingredients
3/4 c whole wheat flour3/4 c white flour2 tsp baking powder1/8 c brown sugar1/2 tsp salt1 tsp cinnamon1 large egg1 1/3 cup 2% milk1 tbsp vanilla1/4 c unsweetened applesauce
Directions
Mix dry ingredients together first. Then add remaining ingredients and mix well, just until smooth. Heat non stick skillet to just below medium heat, add cooking spray if needed. Pour 1/4 c into skillet, cook until bubbles start to form and pop, then flip and cook for approximately 1 minute until lightly brown on both sides. Serve with your choice of topping. I use sugar free syrup.

Makes 6 - 6" pancakes or 8 - 4" pancakes
