Mama's Pimiento Cheese spread

One pound New York Extra Sharp cheddar cheese. One cup lite mayonnaise. One 4 oz. jar Dromedary sliced pimientos.
Shred cheddar cheese and mix with diced pimientos and one cup mayonnaise. For this recipe I used lite mayo. My mother used the full strength but this still tastes really, really good. Mix all together. I used a small food processor but usually mix it by hand. We use this to stuff celery sticks and if there is left-overs, it makes a really good sandwich or snack on crackers. This makes 3 cups which ends up being about 144 teaspoons.
