4 cups brown rice2 Tbsp Catsup2 Anaheim Chile Peppers1 large Chicken Breast, no skin, excess fat trimmed 3 links Johnsonville New Orleans Andouille sausage1 tsp (approx) Blackened Seasoning1.5 tsp (approx) cajun seasoning0.5 tsp Cayenne Pepper (Ground)***.5 Tbsp Extra Virgin Olive OilSalt and Pepper to taste
Start rice cooking in separate pot
Meanwhile, cut peppers, chicken and sausage into small chunks.
Saute peppers in olive oil and splash of water in a large pan until just beginning to soften, add chicken, sausage, and blackened seasoning and continue to saute until chicken is cooked through.
Combine meat/pepper mix with rice and all remaining ingredients and serve.
***As written, this recipe is SPICY! To tone it down, reduce the amount of Cayenne or skip it completely.
