4 ounces cooked chopped chicken breast6 oz crawfish tail meat (parboiled)1 jar hot salsa1 can diced tomatoes1 medium yellow onion, chopped1/2 cup chopped green bell pepper2 tsp creole seasoning1 T salt3 bay leaves3 sprigs fresh thyme3 cups water
Saute green peppers and onions until translucent. Add water, seasoning, bay leaves, salt, salsa, and rice. Cook 45 minutes or until rice is cooked through. Add chicken, thyme, and crawfish tail meat. Make about seven and a half 1-cup servings.
