Leftover Turkey Tortellini Soup

Ingredients
10 C water2 t olive oil1 C onion, chopped2 t garlic, minced2 C celery, chopped2 C baby carrots, chopped15 oz can stewed tomatoes8 oz light turkey meat2 C green beans, frozen2 C Mama's homestyle frozen tortellini4 t Vogue Cuisine low sodium Instant VegeBase1/2 t salt1/2 t pepper
Directions
Before anything else, start by putting the water into a large pot, over med/high heat.

While this is going you will chop your veggies.

Next, in a seperate pan with the olive oil, sautee the onion and garlic for 2 minutes. Add the carrot and celery and sautee for 3 minutes more.

At this point your pot of water should be boiling, if it's not then wait for it to do so.

Add all ingredients to the pot. Bring it back up to a boil and then turn it down to simmer for 10 minutes.

This makes 14, 1 C servings.

    I make this soup as well after Thanksgiving! My boys love it!! I add potatoes and any leftover dinner vegetables. Goes great with fresh baked dinner rolls or crusty bread. - 11/27/12
