Peanut Butter Icing

Ingredients
2 cups Natural peanut butter1 cup unsalted butter, softened2 cups powdered sugar, unsifted
Directions
Beat softened butter in mixer on high speed, add sugar while still beating on high, add peanut butter, continue to beat until you like it. Adding more powdered sugar (another 2 cups) will make it a stiffer concoction which can be rolled into balls and dipped in melted chocolate. Made like this it works well as an icing. Can be refrigerated to make a malleable dough, or frozen for long term storage.

    so fattening and hard to spread but so yummy...add some rice krispys and you got peanut butter balls! they rool up nicely - 7/22/10
