Blueberry Lemon Banana Bread

1 cup all purpose flour1/2 cup whole wheat flour1/2 cup raw wheat germ3/4 teaspoon baking soda1/2 teaspoon salt1 cup sugar1/4 cup butter, softened1/2 cup mashed banana1/2 cup unsweetened applesauce2 eggs1/3 cup lf buttermilk1 teaspoon vanilla extract1 cup frozen blueberries (thawed)1 tablespoon grated lemon rindcooking spray

Lightly spoon flours and wheat germ into measuring cups and level wtih a knife. Combine flour, wheat germ, baking soda and salt stirring with a whisk.
Beat sugar and butter in a large bowl on medium about on minute.
Add banana, applesauce, egg, buttermilk and vanilla. Beat until blended.
Add flour mixture; beat on low until moist.
Gently fold in blueberries and lemon rind.
Spoon batter into 3 mini loaf pans (45 minutes) or 1 regular loaf pan (bake 1 hour 15 minutes) coated with cooking spray. Insert wooden pick in center. If it comes out clean, it's done.
Cool on wire rack 10 minutes.
Remove from pan(s) and cool completely on rack.
