Breakfast Sausage (Turkey)

Ingredients

1 lb ground turkey1 tsp. rubbed or ground sage (more or less to taste)1 tsp. salt1/2 tsp. ground black pepper (more or less to taste)
Mix all ingredients together. Separate into 12 meat balls and flatten into patties. Separate patties with plastic wrap, and store in an airtight container for up to 4-5 days in the fridge. Or freeze to use as needed.
To cook, just cook over medium heat in an open skillet, turn over when the patty starts to brown. Depending on the skillet you use, you may need to spray with some oil before cooking to prevent sticking.

I hope she likes it, as I said, I've been making sausage this way for years, mainly because my body cannot handle the preservatives that are in store bought sausage.
