Olive Oil6 Green Onions, sliced1 Garlic Clove, crushed1/4 Cup Organic Whole Grain Spelt Flour2 1/2 Cups Vegetable Broth2-3 tsps Lemon Juice1/2 tsp Grated Lemon Zest2/3 Cup Coconut Milk2/3 Cup Coconut Cream1 1/2 Mint Leaves, choppedCeltic Sea Salt, to taste2 Avocados, sliced into cubes1 Cup Spinach, mincedMint Sprigs for Garnish
In a soup pot, heat oil. Add green onions, garlic, and spelt flour. Simmer. Stir in remaining ingredients, mix well. Add avocados and spinach last, warm-stirring gently. Serve, garnishing with mint sprigs
