2 cups turkey breast meat, cooked and chopped24 oz cooked pasta (12 oz pkg uncooked)1 shallot, chopped2 green onions, chopped2 T minced garlic4 oz can mushrooms, chopped1 stick margarine3 T floursalt & pepper to taste1 1/2 cups skim milk4 oz neufchatel cream cheese1/3 cup fat free sour cream1/2 cup reduced fat shredded Mexican blend cheese1/3 cup reduced fat grated parmesan cheese
Melt margarine in a pot on the stove. Add shallots, onions, and garlic and cook until soft. Add flour and cook until blended. Add mushrooms, 1 cup milk, sour cream, and cream cheese and stir until melted and blended throughout. Add another 1/2 cup milk if sauce becomes too thick. Add salt, pepper, turkey, and pasta and toss to coat. Top with shredded cheese and parmesan cheese. Bake 30 minutes at 375 degrees.
