Sauerkraut Soup

2 tbsp Extra Virgin Olive Oil1/2 White Onion, chopped3 Cloves Garlic, chopped2 Yukon Gold Potatoes, diced1 tsp Dried Thyme2 bay leaves1 lb Pork Tenderloin, cubed4 cups Low Sodium Chicken Broth4 cups Water1/4 cup Sherry, dry1 can Cannellini Beans1 can diced Fire Roasted Tomatoes (w/ garlic)1 can Sweet Kraut (bavarian style)1 cup French Bread Crumbs or Cubes
1. Saute onions, garlic and potatoes in olive oil in a large pot over medium high heat
2. Add herbs and pork and continue to saute
3. When vegetables are softened, add chicken broth, water and sherry
4. Rinse beans and kraut and add to pot with tomatoes
5. Add bread crumbs or cubes, this will thicken the brothas it cooks
6. Reduce heat and cook for 30 minutes
