Gluten-Free Tomato-Cheese Pizza

Dough:1 cup water, divided1 teaspoon agave nectar1-1/2 teaspoons instant dry yeast1-1/3 cups gluten free flour1 teaspoons extra virgin olive oil1 teaspoon salt1/2 cup pizza sauce3 ounces grated low fat mozzarella cheese
Preheat oven to 425 degrees. Heat a baking stone.
Mix 1/2 cup water and agave nectar. Add yeast, stir and let sit 10 minute to proof.
Add flour, olive oil and salt. Stir to mix well. Add enough of the remaining water to make a rather thin dough.
Put a piece of parchment paper on a pizza paddle. Sprinkle the paper with cornmeal. Spoon the dough onto the parchment and spread with a back of a spoon as thinly as possible, keeping the edges a little thicker.
Bake 10-15 minutes. Spread with sauce, sprinkle with cheese, and bake another 7-10 minutes, until the cheese is melted.
