Ingredients
1 cup fat free ricotta 1/3 cup fat free mozzarella cheese, shredded1 plum tomato, diced1/4 chopped lean ham1/8 tsp fresh ground pepperFour 6" fat-free flour tortillas (or regular)- recipe calculated w/ wegmans reg. flour tortillas
Directions
Pre heat oven to 400 degrees F.

In a med bowl combine cheeses, tomato, ham, and pepper. Divded mixture evenly among the tortillas. Roll up and wrap in foil. Place the foil packets on a baking sheet. Bake until heated through, about 10 mins. Open the packets carefully, as steam will escape.

* Can also cook in microwave. Place filled, rolled tortilla, two at a time, stem-side down, on a microwavable plate; cover with plastic wrap and microwave on Med-High 1 minute 20 secs.
