Sweet Potato Souffle, Low Fat

Ingredients
9 sweet potatoes, baked3/4 cup evaporated milk1/2 cup Egg Beaters2 tsp vanilla1/4 cup sugar1/4 cup brown sugar1/4 splendapinch salt1/2-1 tsp nutmeg or spices of your choice
Directions
Preheat oven to 350 degrees.
Bake sweet potatoes (or microwave.)
Scoop out potatoes, put in bowl and mix on high speed until very smooth.
Add Milk, White Sugar, Egg Beaters, Splenda, salt and mix until light and fluffy.
Spray casserole dish with Pam and pour mixture in dish.
Sprinkle with brown sugar and nutmeg.
Bake at 350 degrees for 30-45 mins. (when knife inserted comes out clean).
