Turkey Roll Up4 slices of lowfat turkey breast4 medium Boston lettuce leaves4 scallions4 red bell pepper stripsCilantro Mayonnaise3/4 cup fat-free mayonnaise3/4 cup loosely packed cilantro leaves1 Tbsp fresh lime juice1 tsp light soy sauce1 small garlic clove
Cilantro Mayonnaise
Place the mayo, cilantro, lime juice, soy sauce, and garlic in a blender or food processor. Blend until smooth.
Roll Up
Place 1 slice of turkey on a lettuce leave spread with cilantro mayonnaise. Add 1 scallion and 1 pepper strip. Fold into a tight cigarlike roll.
