SPICEY BLACKENED CATFISH

Ingredients
1 T sweet paprika1 t. dried oregano1 t. dried thyme1/2 t. cayenne, or to taste1 t. sugar1 t. salt1/2 t. black pepper4 catfish fillets4 garlic cloves, sliced thin2 T. olive oil2 T. butterlemon wedges as an accompaniment
Directions
In a small bowl combine the paprika oregano, thyme, cayenne, sugar, salt, and black peper. Rub the spice mixture on both sides of the filets, coating will. In a large skillet saute the garlic in oil over medium heat until golden brown. Discard the garlic. Add the better, heat until foam subsides, then saute the satfish for 4 minutes on each side, until cooked throught. Serve with lemon wedges.
