Chipotle Roast for Tacos (Crockpot)

Ingredients
3-4 lbs chuck roast, trimmed of visible fat1 tsp salt1 tsp pepper2 tsp chili powder2 tsp cumin2 chipotle chiles in adobo, chopped1.5 cups salsa2 cloves garlic, chopped1 cup beef broth
Directions
1. Place the chuck roast in a large crockpot and sprinkle it with the salt, pepper, chili powder and cumin.

2. Add the remaining ingredients and cook for 7-8 hours on low.

3. Shred the meat and simmer on high for another 10-15 minutes.

4. Serve on tortillas or rolls!

    I made this roast yesterday and it has an AMAZING flavor & very tender texture. It was wonderful - and it was the only thing my mom & I could talk about while we were eating it! We only put 1.5 chipotles in, so that it wouldn't be too spicy, and it's not spicy at all. Can't wait to make it again!! - 1/18/13
