Ground Turkey & White Bean Chili

Ingredients
* *Canola Oil, 1 tbsp * Onions, raw, 1 medium (2-1/2" dia) * Garlic, 2 cloves * *Turkey, Ground turkey, 93% lean, 16 oz * Chili powder, 1 tbsp * *Ground Cumin, 1 tbsp * *Beans, Cannellini, Progresso brand, 1/2 c (about 3.5 in a 15 oz can), 2 cup * *Rotel Original Diced Tomatoes & Green Chiles, 1.25 cup * *College Inn Chicken Broth - 99% Fat Free, 1 cup * Salt, 1 tsp * Pepper, black, 1 tbsp
Directions
Heat oil in a large saucepan over medium-high heat. Add onion and cook, stirring occasionally, until softened, about 5 minutes. Add garlic and cook 1 minute more.

Add ground turkey, chili powder, and cumin; cook, stirring often, until ground turkey is no longer pink, about 5 minutes.

Add beans, tomatoes with juice, and broth; bring to a boil. Reduce heat to medium-low, cover, and simmer until flavors blend, about 15 minutes. Season with salt and pepper to taste and serve.

***I usually add chopped chipotle chilies and often serve with a dollop of sour cream and shredded cheese.
