Banana Oat Bran Bread

1 3/4 c. Oat Bran1/4 c. wheat Bran (or 2 c. Oat Bran)1/4 c. brown sugar2 Tbs. Pumpkin Puree1/4 c. Maple Syrup1.5-2 Bananas, one mashed, other chopped1 c. milk1 egg1/2 tsp. salt2 tsp baking powder
Preheat oven to 425.
Combine dry ingredients, then add wet. Mix well, and pour into desired pan (muffin/loaf/cake) that has been sprayed. Bake for approx. 15 m. at 425, until they're a deep golden. Be aware of underbaking; they may look done but still be a bit gooey! The golden crust it gets from a few extra minutes in the oven doesn't hurt it ;)
I made 8 mini-loafs; i would consider a loaf the size of a large muffin, half a loaf would be a decent serving, so that's what I based that on.
NOTES: Nutrition info based on sugar-free maple syrup, egg beaters, and 2% milk. Could be even more low-cal if you used a soy or skim milk or splenda instead of brown sugar; I just used what I had. Delicious with some chopped walnuts sprinkled on top, too. Also, the pumpkin puree is a sub for oil, does not have taste in final outcome. Applesauce could also be used. Best warmed up once they're "leftover"! Like a warm bowl of baked oatbran!
