Vegetable soup with Lentils and Wild Rice

Ingredients
4 cups broth, vegetable or chicken low sodium1 Medium zucchinni diced1 large celery stalk diced3 small carrots, diced1/2 med onion diced4 cups fresh spinach chopped1 roma tomates diced1/2 c lentils uncooked1/4 wild rice uncooked8 cups water1 tsp poultry seansonings1 tsp black pepper1 tsp Italian seasoning1/2 tsp Mrs Dash red pepper seasoning1/2 chopped broccoli3 Tblsp parmesan cheese grated
Directions
In large pot add water and broth and bring to boil add in wild rice and lentils cook for 30 minutes stirring occasionally. Add all vegetables and seasonings, except parmesan cheese. Cook for an additional 20-30 minutes until all vegetables tender. Taste and adjust seasonings as needed.
Serve 1 cup with 1 tsp parmesan cheese sprinkled on top.

I did not add any salt so this is why it is so low. The parmesan cheese on top adds a little salty flavor when eating but try not to stir it in. Great with a half of a sanwich or crackers. Warm and delicious
makes approx 9-1cup servings
