Sherry's Sweet Potato Pie

3 eggs1 cup of unsweetened soymilk3 peeled cooked sweet potatoes1/4 cup molasses1 tsp each of ginger and cinnamon2 teaspoonfuls of powdered stevia.
In a food processor, mix together 3 eggs, 1 cup of unsweetened soymilk, 3 peeled cooked sweet potatoes, 1/4 cup molasses, a tsp each of ginger and cinnamon and 2 teaspoonfuls of powdered stevia.
Blend until smooth then pour into pie crust and bake at 350 degrees until the top of the pie begins to form deep cracks (usually about an hour to 90 minutes).
This recipe can be made without the pie crust as well. To do so, spray a ovenproof square casserole dish with olive oil and pour the filling into the dish. Bake at 350 degrees for an hour to 90 minutes or until the top begins to crack.
Makes one pie or 8-16 servings.
