Apple Cinnamon Coffee Cake

1/2 cup packed brown sugar1/4 cup plain, lowfat yogurt2 large egg whites1/2 cup low-fat buttermilk2 cups all-purpose flour2 tsps. baking powder1/2 tsp baking soda2 tsps cinnamon1/4 tsp salt1 medium apple, unpeeled, cored and finely chopped
1. Preheat oven to 375 degrees F.
2. Prepare a 9-inch square baking pan with nonstick pan spray.
3. In a large bowl, beat together the sugar, yogurt, egg whites and buttermilk until smooth. Add the flour, baking powder, baking soda, cinnamon and salt and mix just until the ingredients are moistened. (The batter will be stiff.) Fold in the apple.
4. Spread the batter in the prepared pan. Bake 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Cut into 10 pieces.
