1/2 c canned pumpkin2/3 cup brown sugar4 egg whites1/2 cup buttermilk 2 tsp baking soda2 tsp cinnamon 1/2 tsp salt3 tsp baking powder 1 cup carrots grated1 to 1/4 cups whole wheat flour
Preheat oven to 375 degrees, Mix all ingredients except flour together stir in flour just until moinstened. Spoon into muffin tins coated with nonstick cooking spray. Bake for 15 minutes.
