Ingredients
2 cups self-rising white flour 1 cup grated carrots1 cup sugar 1 can of kidney beans1 cup brown sugar 2 medium eggs1Teaspoon vanilla 8 tablespoons chocolate1/4 cup olive oil chips1/2 cup fat-free milk 1/2 cup of walnuts
Directions
Mix all ingredients together. I grated enough carrots for a cup. I put beans in a food processor and blended. Pour
1/4 cup of mix in cupcake pans. Bake in 350 degree oven for 25 minutes. There are 170 calories in a cupcake. You can reduce the calories by omitting the walnuts and chocolate chips, but they are oh so good.
