Sweet Potato & Apple Casserole

1 lb sweet potatoes, peeled2 large apples (skin on)1/3 C. Craisins3/4 tsp. crystalized ginger, diced fine1/4 C. apple juice concentrate1/4 C. water2 TB brown sugar substitute (Sugar Twin)2 tsp lemon juice1/2 tsp cinnamon1/4 tsp ground clovesOptional: 1 TB butter, in thin slices
Preheat oven to 375. Spray an 8" baking pan or shallow casserole dish (I use Corningware). Cut sweet potatoes into thin slices and quarter. Core and thinly slice apples, leaving skin on for extra fiber. Layer 1/2 of sweet potatoes in pan, topped with 1/2 of apples. Sprinkle 1/2 of craisins over the layer and 1/2 of ginger. Repeat with second layer.
In a measuring cup, combine apple juice concentrate, water, brown sugar substitute, lemon juice & spices. Mix well and pour over layers. Cover and bake for 45 min. Remove cover and dot top with butter (or not; equally yummy without). Bake an additional 15 min. uncovered.
Serving size = 1/2 C. Yield: 8 servings. Serve hot or cold.
